Chocolate Mint Slice Recipe | Best Famous “Cook” Version

This recipe comes through generations, on my mothers side, who ironically, has a last name of Cook!

I made this last night for a Pot Luck Dinner and it got eaten for Desert, I’ve never seen it disappear so quick, maybe 30 seconds at the most??

Give it a go and let me know how you find it, let me know if you got any questions!

Ingredients For Slice:

  • 1 Cup Self Raising Flour
  • 1 Cup Brown Sugar
  • 1 Tablespoon Cocoa
  • 1 Beaten Egg
  • 1/2 Teaspoon Vanilla
  • 125 Grams Butter Melted

Ingredients For Icing:

  • 1 Cup Icing Sugar
  • 1 Tablespoon Cocoa
  • Peppermint Essence (Make it smell and taste quite strong)
  • Small amount of Hot water (teaspoons at a time till its not to thick and spreadable)

Steps 1

Mix Flour, brown sugar & cocoa. Add egg, Vanilla & Melted butter.

Step 3

While in Oven, mix icing ingredients in bowl, then remove slice from oven when edges have risen and starting to look crisp and ready. Wait couple of minutes after it comes out of oven so it firms up a bit, then ice while still hot.

Step 4

Eat while still warm and soft (YUM) or stick in fridge and eat once firm and cold.
